Embracing this growing trend, Taiwanese restaurant Match2 proudly introduces its new themed menu, the “Black Sesame Collection”. The limited-time series will launch on 11th March, 2026 and run until early June. Thoughtfully curated by Executive Chef Hin Yeung, the collection celebrates the distinctive richness of black sesame, freshly roasted and finely ground in-house to capture its fullest flavour. The series transforms a wide range of dishes – from savoury mains and crispy snacks to desserts and beverages – into a cohesive culinary experience centred on the ingredient’s deep, aromatic character. From steaming bowls of noodles to delicately crafted desserts, each dish explores the layered, nutty profile of black sesame while bringing a refreshing twist to familiar Taiwanese flavours.

House-roasted and Freshly Ground: The Essence of Black Sesame

At the heart of the “Black Sesame Collection” lies uncompromising attention to ingredient quality and preparation. Carefully selected premium black sesame seeds are freshly roasted in-house each day to unlock their natural fragrance before being meticulously ground to release their rich oils and intense nutty aroma. The roasting and grinding process demands precise control of heat and timing, allowing the sesame’s flavour to develop gradually to its full depth while maintaining a clean, rounded profile free from bitterness. This carefully refined essence becomes the signature thread running through the entire menu.

Under the creative direction of Executive Chef Hin Yeung, each dish is designed around the artistry of black sesame and the philosophy of hand-crafted preparation. From roasting and grinding to final plating, every stage reflects careful attention to balance and technique. Black sesame is not merely used as a flavouring, but rather explored through multiple culinary expressions. Black Sesame Cheese Soft-boiled Egg

Fresh eggs are cooked with precise temperature control, resulting in silky, tender egg whites while preserving a luscious molten yolk. Black sesame, freshly roasted in-house each day, is blended into the egg mixture, allowing delicate sesame grains to remain for added texture and aroma. Inside, a combination of Cheddar and mozzarella cheese melts gently, creating a rich interplay when cut open, where flowing yolk and semi-melted cheese intertwine, layering a nutty sesame fragrance with savoury cheese notes.

Taiwanese Dao Sausage Dry Noodle with Black Sesame Sauce

Springy, chewy dan dan noodles form the base of this hearty dish, with their firm texture allowing them to absorb the sauce beautifully. The noodles are tossed in a specially crafted sesame sauce made with house-ground black sesame and aromatic sesame paste, creating a deep, layered flavour profile. The dish is topped with two varieties of Taiwanese sausage – classic pork sausage, offering a rich sweet-savory flavour, and cuttlefish sausage, which introduces a subtle hint of ocean freshness. Shredded cucumber and crushed peanuts add a refreshing crunch, while golden crispy shallots enhance the overall aroma. When thoroughly mixed, the sesame sauce coats every strand of noodles, intertwining with the richness of the sausages, the freshness of cucumber, and the nutty crunch of peanuts to deliver a balanced and satisfying Taiwanese-style noodle dish.

Black Sesame Shrimp Toast

Each piece of shrimp toast is freshly prepared to order to ensure the best texture. A layer of finely minced shrimp paste is spread evenly across the slices of bread before being coated with a mix of black and white sesame seeds. The toast is then deep-fried until golden and crisp. The high heat quickly releases the fragrant sesame aroma, creating a crisp, airy crust while the shrimp paste inside remains succulent and springy. Served alongside a house-made salad mayonnaise with a smooth, lightly sweet profile, the dipping sauce complements the rich sesame aroma and fresh shrimp sweetness, creating a well-balanced flavour experience.

New Dessert Creations – A Harmony of Richness and Delicacy

The dessert selection highlights a thoughtful combination of ingredients and layered textures, presenting black sesame through a variety of sweet creations that deliver a refined and multi-dimensional tasting experience.

Dirty Chocolate Black Sesame Mochi Ball

Inspired by traditional mochi and the contemporary “dirty dessert” trend, this creation features a soft and chewy glutinous rice mochi skin wrapped around a house-made black sesame filling. The sesame seeds are freshly roasted daily before being finely ground and cooked with shredded coconut to form a dense yet smooth paste that is rich and aromatic, without a molten centre. The finished mochi is dusted with cocoa powder and crushed nuts, allowing the nutty sesame fragrance to mingle with the deep notes of cocoa and roasted nuts. Seasonal fresh fruit is served alongside to add a refreshing touch of natural sweetness that balances the dessert’s richness.

Black Sesame Pudding with Mochi & Taro Ball

This dessert begins with a silky pudding base made from black sesame paste, fresh milk and sugar. The mixture is carefully blended and chilled until set, resulting in a smooth, delicate texture with a gentle sesame aroma. The pudding is accompanied by chewy mochi, bouncy taro balls, soft red beans and fresh mango cubes. These elements create a layered contrast of textures – from creamy and soft to pleasantly chewy – while the fruity brightness provides a refreshing counterpoint to the nutty sesame flavour. A side of coconut milk is served alongside, adding a light sweetness and silky finish that further balances the richness of sesame.

Indulgent Beverages – The Gentle Warmth of Black Sesame in a Cup

The beverage selection extends the deep aroma of black sesame into a comforting drink experience. During preparation, the chefs carefully spread the black sesame paste along the inner walls of the glass, allowing the thick sesame sauce to form natural patterns along the cup. The series introduces two signature drinks: “Black Sesame Coconut Milk” and “Black Sesame Pudding Milk Tea”. The latter combines fragrant milk tea with soft cubes of black sesame pudding made from house sesame paste. The pudding’s delicate texture complements the tea’s rich aroma, while the sesame fragrance and tea notes unfold together in layered harmony, delivering a refined and satisfying beverage experience.
