MULAN embodies the diverse forms and characteristics of “water”, reflecting culinary evolution and our philosophy of “eating in harmony with the seasons”. Guests indulge in innovative dishes blending traditional Chinese ingredients with exquisite Western techniques, featuring abalone, sea cucumber, shark fin, and fish maw.

MULAN partners with Bollinger, a 100% family-owned house founded in 1829, renowned for their unconstructed devotion to craftsmanship.  They were the first house to be granted its first Royal Warrant by Queen Victoria in 1884.

Priced at HK$348 nett per person, the set begins with 5-head abalone in savory sauce with rice krispies paired with Bollinger Special Cuvée, followed by Guanxi sea cucumber with Bollinger Rosé, truffle-scented scrambled eggs with fish maw and conpoy matched to Bollinger PN VZ19, and fried shark fin with cordyceps flower rice elevated by Bollinger La Grande Année 2015. The evening closes on a refreshing finale of mangosteen sorbet with Yunnan snow swallow, complemented by the refined elegance of Bollinger La Grande Année Rosé 2015, uniting Cantonese flavors with one of Champagne’s most distinguished maisons.
