Azure 80Chinese New Year Menu Highlights

“Leaping Over the Dragon Gate” – Australian Lobster with Rice Cakes in Superior Cheese Broth. Features premium Australian lobster with fresh, bouncy meat, paired with Shanghai-style rice cakes for an East-meets-West fusion. The lobster’s umami flavor infuses the rich broth with cheese, perfectly coating the chewy, glutinous rice cakes. The bright red lobster shell creates a festive atmosphere, contrasting beautifully with the creamy golden cheese sauce.

“All-Encompassing Abundance” – MT’s Signature Buddha Jumps Over the Wall. A gathering of top-tier delicacies including Abalone, Sea Cucumber, South African Fish Maw, Pork Tendon, and Goose Web. The soup is traditionally stewed to be rich and gelatinous (collagen-rich), with ingredients cooked to tender perfection. Visually impressive with a “stacked” abundance of premium ingredients. The glossy, dark brown broth conveys a sense of nourishment and high quality (“generous portions”).

“Five Blessings” – Appetizer Platter (Highlight: Cherry Foie Gras). The Cherry Foie Gras features a beetroot jelly coating encasing smooth French foie gras mousse. It melts in the mouth, balancing savory notes with the slight sweetness of beetroot. Crafted to look exactly like realistic red cherries. Vibrant, eye-catching, and highly “Instagrammable.”

“Abundance Every Year” – Sweet & Sour Mandarin Fish with Pine Nuts. A classic Huaiyang/Suzhou dish that showcases exquisite knife skills. The fish has a crispy exterior and tender flesh, topped with an appetizing sweet and sour sauce suitable for all ages. Deep-fried to a golden hue in a three-dimensional “squirrel” or flower shape. The vibrant orange-red sauce makes it a colorful and appetizing centerpiece.

“House of Gold and Silver” – Lobster & Radish Puff Pastry. An upgrade to the traditional shredded radish pastry by adding lobster meat for a touch of luxury. The outer pastry is crispy and flaky, while the filling remains sweet and juicy. Golden, intricate thousand-layer pastry. Cutting it open reveals the moist filling of shredded radish and lobster.
