FEAST OF CENTRAL ITALY AT CUCINA
Enjoy the best flavours of central Italy

Cucina’s Chef de Cuisine Andrea Delzanno is taking guests on a gastronomic journey to the different regions of Italy, with central Italy being the first destination. From now until 30 September 2022, guests can savour the new four-course signature set menu meticulously crafted by Chef Andrea with quintessential delicacies from selected regions of central Italy.

Start off the decadent meal with the light and refreshing Tuna Tartare, Tuscan Panzanella Salad, Lemon Oil Dressing. One of Tuscany’s most famous dishes as well as a traditional Italian starter, panzanella is a simple yet flavourful salad made with bread croutons, ripe tomatoes, cucumber and onions in a vinaigrette dressing that matches perfectly with the mild and light taste of tuna.

Next up is the Strozzapreti Norcina, Sausage, Cream, Black Truffle Sauce. This famous and deeply comforting dish from Norcina boasts a rich cream-based sauce with some of the best sausages in Italy, since the town is known for its pork products. The town is also famed for its black truffles, which are presented here in abundant quantities for added aroma

For the main course, guests can enjoy the Veal Tripe ‘Roman Style’, Spicy Tomatoes, Chickpeas, Pecorino. Slow-cooked for four hours and then topped with goat cheese before serving, this traditional dish is rich and hearty and boasts a touch of sourness and spice. For Chef Andrea, this traditional home-style recipe is especially meaningful because it’s what his grandmother used to cook for him when he was a child.

Last but not least, guests can end the Italian feast with the decadent Ricotta Cheese Tart, Chocolate Chunk, Vanilla Ice Cream. Served with ice cream on the side, the delectable tart is made with ricotta – a mild Italian cheese – along with chocolate chunks, candied fruits and a few gold leaves on top for a luxurious finish.

Wine lovers can choose to pair the menu with Italian wines meticulously selected by Raymond Lo, Cucina’s Beverage Manager to bring the gourmet experience to the next level. Raymond specially selected four fine wines from central Italy to accompany each delicacy, allowing guests to enjoy an authentic wine pairing experience.
